Oxygen in the pack, causes and consequences for sausage products. The gas barrier of mono-PET is not sufficient, but what are the consequences? Application and advantages for packaged sausage products through bio-based protective cultures. Packaging serves to protect our food. The EU's Packaging and Packaging Waste Regulation now stipulates that all plastic packaging must be either reusable or easily recyclable by 2030. For sausage packaging in particular, this means mono-PET or mono-PP as the packaging material. The latter is not a problem for the shelf life of the sausage; oxygen barriers can be used here, but this does not apply to packaging made of pure PET. As food for thought, we would like to show an alternative way to ensure colour stability and freshness retention for such products using protective cultures. Details
